10 Easy Egg Recipes

Eggs are one of the most versatile and inexpensive foods in the world. We use eggs in baking, casseroles, and salads. We can boil them, fry them, devil them or bake them in a pie. These recipes will take you from breakfast to lunch and right on into supper.

  1. Brown Butter Spaghetti and Crispy Fried Egg

This recipe is a great way to use leftover spaghetti noodles.

  1. Fry two eggs in 2 tablespoons of butter in a small non-stick skillet. Fry the egg to your own liking, but remember it is best for this recipe when the eggs are runny, the edges are very crispy and the butter is brown. Salt and pepper to taste.
  2. Remove the cooked eggs to a saucer. To the butter left in the skillet add one cup cold cooked spaghetti noodles and stir to coat the noodles with the butter. Leave spaghetti in the pan until it is hot. Remove the spaghetti onto a plate then slide the eggs from the saucer onto the top of the noodles. Add chopped green onions and serve hot.

Serves 1 or 2/

  1. Frog In A Hole

This is an old favorite. Simple and delicious.

  1. Using the bottom of a juice glass cut a round shaped hole in the middle of a large thick slice of french bread.
  2. Spread butter on both sides of the bread and place it in a hot non-stick skillet. Turn the heat down to medium and then crack one egg into the hole in the middle. Salt and pepper to taste. When the bread is toasted on one side, carefully turn the bread over to cook the other side. About two or three minutes on each side. Carefully remove the Frog in a Hole to a plate and top with a little cheese if desired.

Serves 1.

  1. Vegetarian Three Egg Omelet

Omelets are a delicious way to prepare eggs. You can make a light omelet or a hearty one depending on which ingredients you choose. This one is perfect for the vegetarian crowd.

  1. You will need 1/4 cup of chopped onion, 1/4 cup chopped bell pepper, 1/4 cup chopped ripe or green tomatoes, 1/2 cup chopped mushrooms.
  2. Melt 1 tablespoon of butter in a non-stick skillet on medium. Real butter is best.
  3. Break 3 eggs into a small bowl and beat with a fork. Add 1 tablespoon of milk to the beaten eggs and stir.
  4. Add the onion and bell pepper to the butter in the hot skillet. Cook for 2 minutes. Add mushrooms and cook for 1 minute more. Remove cooked vegetables to a small bowl.
  5. Carefully pour the beaten egg mixture into the hot skillet. Cook omelet 2 minutes on each side.
  6. Add the cooked vegetables to one side of the omelet. Top with cheddar or your favorite cheese, salt and pepper to taste and fold the empty side over onto the side with the veggies and cheeses.
  7. Carefully slide the omelet onto a warm plate. Garnish with fresh chives and parsley.

Serves 1 or 2 people.

  1. 30-Minute Breakfast Bake

This recipe is great for a cold morning. Or Christmas. It uses frozen hash browns and precooked frozen sausage so it can be put together and baked in 30 minutes.

  1. In a 9in square casserole dish place a layer of frozen hash browns.
  2. Place a layer of crumbled frozen precooked sausage or sausage you browned yourself on top of the hashbrowns.
  3. Place a layer of sharp cheddar on top of the sausage.
  4. Repeat layers until dish is full.
  5. Break 5 eggs into a bowl and beat with a fork. Add 2 tablespoons of milk to the eggs and stir.
  6. Pour egg mixture over the hash browns, sausage, and cheese in the casserole.
  7. Bake at 375 degrees for 30 minutes then remove from oven. Let stand for 5 minutes before serving.

This recipe will serve 3 or 4 people easily and can be adjusted for a crowd.

  1. Bacon and Jalapeno Deviled Eggs

This is one of the most delicious deviled egg recipes ever invented.

  1. Boil 1 dozen eggs for 6 minutes after they come to a boil. Cool them and peel them.
  2. Cut each boiled and peeled egg in half length way. Remove all of the yolks to a small bowl and set the whites aside.
  3. To the bowl of yolks add salt and pepper to taste, 2 tablespoons of mayonnaise, 4 slices of crispy cooked bacon chopped fine and 1 jalapeno with the seeds and veins removed and chopped fine. Stir the egg yolks, mayonnaise, chopped bacon, chopped jalapeno together until smooth.
  4. Fill the hollow of each egg white with a spoonful of the yolk mixture and arrange on a plate. Garnish each deviled egg with a small piece of bacon.

Makes 2 dozen deviled eggs.

  1. Fluffy Scrambled Eggs with Tomato and Feta
  2. Break 3 eggs into a small bowl and beat with a fork. Add 1 tablespoon of milk to the beaten eggs and stir.
  3. Heat 1 tablespoon of butter in a small non-stick skillet. Add the egg mixture to the hot skillet. Salt and pepper to taste. Use a rubber spatula to gently stir the eggs as they cook.
  4. When the eggs are almost set, add 1/2 cup of chopped tomato and 1/2 cup of feta cheese. Turn off the heat and cover. Let stand for 5 minutes and serve.

Serves 2.

  1. Fried Potatoes and Runny Eggs

This recipe is a hearty dinner or breakfast skillet that is sure to be a hit.

  1. Peel and slice 4 regular sized potatoes and put them in a bowl of cold water.
  2. Chop 1 white onion into a medium dice.
  3. Heat 1/2 cup of vegetable oil in a non-stick skillet. Drain the potatoes well and add to the hot oil.
  4. Add salt and pepper to taste and fry for 10 minutes. Add the chopped onion and fry for another 7 to 10 minutes.
  5. Using a large spoon, make a well in the potatoes at 4 or 5 regular intervals around the skillet. Carefully break an egg into each of the wells that you made, turn the burner to low and cover. Let cook for 5 minutes then turn the burner off. Let set for 5 more minutes and enjoy.

Serves 4.

  1. Egg Salad
  2. Boil 1 dozen eggs. Cool and peel.
  3. Chopped cooled and peeled boiled eggs into a fine dice.
  4. Place chopped eggs in a medium sized mixing bowl.
  5. Add 1/4 cup onion, finely chopped. Add 1/4 cup bell pepper, any color, finely chopped.
  6. Add 1/3 cup pickle relish to the bowl as well as 1/2 cup mayonnaise. Add 1 tablespoon of yellow mustard. Add salt and pepper to taste.
  7. Stir to mix thoroughly. Chill and enjoy.

Makes approximately 6 sandwiches.

  1. Tex-Mex Egg Dinner

This is an old recipe and family favorite.

You will need some good chili. You can make your own or use a good canned. Make some pancakes out of cornbread batter. Whether you make it from scratch or from a mix it should fry beautifully in a greased and hot non-stick skillet.

Place one of the cornbread cakes on a warm plate. On top of the cornbread add a soup ladle full of chili. A fried egg or two goes on top of the chili. The whole thing is topped with lettuce, tomato, onion and cheese.

Each cornbread cake serves one person.

  1. Bacon and Gouda Pie

This is a simple recipe with an uptown presentation. Preheat oven to 400 degrees before you begin.

  1. Use frozen pie crust and line a pie plate with it. Break 6 eggs into a bowl and beat with a wire whisk.
  2. Add 2 tablespoons of milk and whisk. Add 1lb of bacon (precooked weight) cooked crisp and chopped.
  3. Add 1/4 cup finely chopped onion. Add 1 cup finely grated gouda cheese.
  4. Pour the egg mixture into the pie pan and use a rubber spatula to scrape every drop into the pie.
  5. Carefully slide the pie pan onto a cookie sheet and carefully place into the oven. Bake for 30 to 40 minutes until a toothpick inserted into the middle of the pie comes out clean. Let stand 5 minutes before cutting.

Serves 4 to 6.
